A lot has to do with how much you are ingesting and in what form. Some juice the sprouts which would be very concentrated. I would stay away from buckwheat and opt for trying something else. And know when to harvest them. As seeds sprout and grow, the compounds found in the seeds that can be troublesome in large quantities are transformed during the sprouting process. So you would not want to eat alfalfa sprout until they have their tiny leaves.

I guess the better question for me to ask is what are looking to accomplish with sprouting? Are you trying to do a raw diet or boost your nutritional intake. Starting low and going slow is usually a good approach. This way you can work with your doc to see if your dietary changes are having an impact on your counts or cyclo levels.
