Over the years of various treatments for my low-risk MDS and now AML, I have had lack-of-taste problems. For me, OTC Zinc Citrate (50mg) with a meal has helped me to resolve my taste/eating problems fairly quickly.
YMMV but it may help your mom's appetite.
